Introduction

A-huei Plain Noodles, currently run by the third generation owner, is a favorite for locals. The shop may look average and insignificant, but business is always good, and there is never a lack of customers.

In addition to the specialty of the shop, plain noodles, the shop is also renowned for their wonton. Wonton noodles or wonton soup are almost always a must. Frozen wontons, which people can cook them at home, are also sold here. Pot-stewed foods, which stewed with Chinese herbs and medicinal ingredients, are also decent. Their specialties of pot-stewed foods include pig’s scalp, bean curd sheet, dried bean curds, and kelp; applied with a light amount of chili sauce, the flavor is pretty much authentic.

1.How long have you been in business? Which generation are you?

It’s been 40 years since this shop was founded, and I’m currently the third generation owner.

2.How much are you able to sell a day?

Around 100 bowls a day.

3.What are your specialties?

Mostly dry noodles or plain noodles.

4.When do you need to begin the preparations for each day, and how much time do you spend?

We almost always begin our preparations at 5 in the morning, and it takes about 4 hours.

5.What is your management philosophy?

Ingredients must be fresh.

6Were there any experiences since your opening that you found particularly difficult or unforgettable?

7.Do you have you a few words to share with us?

Kids should study hard to have a brighter future.

8.Do you find anything that is in need of improvement around Xiaoxi?

Reflections

The owner of A-huei Plain Noodles was very friendly, patiently answering all of our questions. Their plain noodles were chewy; anyone, given the chance, should certainly give it a try. Also, the owner always tries to satisfy the requests of customers in the shortest amount of time possible, and not only did not mind at all that we interviewed him during his business hours but moreover calmly answered all of our questions. I remember that my mother once took me there, and that I had two bowls of plain noodles, almost enough to burst my stomach!
